Finally it’s asparagus season again! And for most people, asparagus comes with a hollandaise sauce. Of course, the butter and egg sauce is not vegan. Fortunately, it is relatively easy and fast to make a completely plant-based alternative. Here is our recipe for asparagus with vegan hollandaise sauce.
The base for the sauce is a roux, to which vegetable stock and soy cream are added. Then all you need is a few spices and the vegan hollandaise sauce is ready.
We cook the white asparagus traditionally in water in with a little bit of salt, sugar and lemon juice. So it already gets a delicious taste while cooking.
Asparagus with Vegan Hollandaise Sauce

Ingredients
Asparagus
- 500 g white asparagus
- 1 l water
- 1 tbsp salt
- 1 tbsp lemon juice
- 1 tsp sugar
Vegan Hollandaise Sauce
- 5 tbsp vegan butter
- 2,5 tbsp flour
- 125 ml vegetable broth
- 125 ml soy cream
- 2 tbsp dry white wine
- 1 tsp mustard
- 1 tbsp lemon juice
- 1 pinch turmeric, optionally for the colour
- salt + pepper
Preparation
- Peel the white asparagus and remove the tough and woody ends.
- Bring the water to a boil in a large pan or a wide saucepan. Season it with salt, sugar and lemon juice. Add the asparagus, bring it to a boil and then let it simmer over low heat for about 12-15 minutes. If you like your asparagus extra soft, you should extend the cooking time accordingly.
- For the hollandaise sauce melt vegan butter in a pot on low to medium heat. Stir in the flour. Add vegetable stock gradually while stirring.
- Add the remaining ingredients slowly while stirring and bring to a boil carefully. Serve directly with the asparagus.
