Looking for a party snack for Halloween? Then our vegan ghost pizza rolls could be just the thing for you. Fortunately, apart from a little cutting and carving, there’s no cooking involved. First of all, a spicy tomato sauce is poured onto the sliced halves of the bread rools, and we’ve also added some vegetables in the form of carrots and peppers. So the dish is also great for kids. Everything is then topped with ghosts made of vegan mozzarella and, if you like, a few spiders made of olives. Nice and spooky. Or maybe just cute 😉
Vegan Ghost Pizza Rolls
Servings: 8 pizza rolls

Ingredients
- 125 g vegan mozzarella
- 4 bread rolls
- black olives, pitted
Vegetable Tomato Sauce
- 1 carrot
- 1 red pepper
- 1 onion
- 1 clove garlic
- 1 can tomatoes, 400 g
- 1 heaped tbsp. tomato paste
- 1 tsp thyme, chopped
- 1 tsp rosemary, chopped
- Salt + pepper
- Olive oil
Preparation
- Finely dice the carrot, pepper, onion and garlic. Sauté everything with a good dash of olive oil in a saucepan over medium heat for a few minutes. Add the tomato paste and sauté briefly. Then pour in the tinned tomatoes. Add the herbs and season with salt and pepper. Cover the lid and simmer for at least 30 minutes until soft, then puree and leave to cool. Season again with salt and pepper to taste.
- Meanwhile, cut the mozzarella into thin slices and cut out ghost shapes with a small knife. Cut the bread rolls in half. Cut small cubes from the olives as eyes and mouths for the ghosts. For olive spiders: Cut the olives in half. One half is the body. Cut thin strips from the other half and put them on the side of the body as legs.
- Preheat the oven to 180 degrees. Top the bread rolls with some sauce and a mozzarella ghost and bake for about 8-10 minutes until crispy. Top with olive eyes, mouth and spiders if desired.
