Tofu Scramble – Veganes Rührei

Tofu Scramble oder Scrambled Tofu ist die vegane Antwort auf Rührei. Und es ist auch genauso schnell zubereitet. Für die richtige Optik benötigt man nur etwas Kurkumapulver. Den authentischen Geschmack liefert Kala Namak. Das sogenannte indische Salz oder schwarze Salz enthält Schwefel, weshalb es typisch nach Ei riecht und wirklich auch so schmeckt.

Tofu Scramble lässt sich pur genießen, schmeckt aber auch lecker auf einer Scheibe Brot oder Toast. Alternativ serviert man gleich noch Baked Beans, Würstchen, Bacon und gebratene Pilze dazu und schon hat man das perfekte warme Wochenend-Frühstück auf dem Teller.

TOFU SCRAMBLE – VEGANES RÜHREI

Zutaten für 2 Portionen (jeweils ca. 1,00 Euro):

  • 300 g Tofu
  • 1 EL Olivenöl
  • 1 TL Kala Namak
  • 1/2 TL Kurkumapulver
  • 1/4 TL Paprikapulver
  • 50 ml Pflanzenmilch
  • ein Prise Pfeffer
  • optional: 1 gewürfelte Tomate, veganer Bacon, etwas Petersilie/Schnittlauch, …

Zubereitung
1. Den Tofu grob zerbröseln und in einer Pfanne mit dem Olivenöl bei mittlerer Temperatur anbraten.

2. Pflanzenmilch (bei extra festem Tofu zusätzlich 50 ml Wasser) und die Gewürze hinzugeben. Nun alles so lange unter Rühren braten bis das Scramble eine homogene aber noch leicht feuchte Masse ist.
