This casserole is the perfect vegan meal. Because it uses a few ready-made products from the supermarket and is therefore quick to prepare, even for novice cooks. And when it’s cold and uncomfortable outside, casseroles taste best anyway. It’s real comfort food. And who would be surprised when you look at the ingredients for this quick gnocchi casserole: potato gnocchi and vegan mince are placed in the casserole dish with spinach, spices and a cream sauce and topped with vegan grated cheese. As we write these words, our mouths are watering again and we wish we hadn’t eaten it all already. But the next casserole day is sure to come soon!
Quick Gnocchi Casserole (Vegan)
Ingredients
- 500 g vegan gnocchi
- 1 onion, small
- 1 clove garlic
- 250 g vegan mince
- 200 g frozen spinach leaves
- 250 ml vegan cream
- 150 g vegan grated cheese
- 1 pinch nutmeg, grated
- salt + pepper
Preparation
- Finely dice the onion. Fry together with the mince in a large pan with a dash of olive oil over a medium to high heat for a few minutes. In the meantime, finely chop the garlic. Add to the mince with the gnocchi and sauté briefly. Add the spinach and cream and season with salt, pepper and nutmeg. Simmer briefly until the spinach has defrosted.
- Then pour everything into a casserole dish. Top with sprinkled cheese and bake in the oven at 200 degrees Celsius for approx. 20 minutes. If desired, briefly switch to the top heat or grill function and bake until the cheese layer is crispy and browned.
