Today we bring you a lovely early summer recipe that will tantalise your taste buds: Polenta with roasted miso radishes and vegan salsiccia. This dish combines delicious flavours and healthy ingredients to create a vegan treat that is both easy to prepare and highly nutritious.
The creamy, garlic-flavoured polenta is the perfect base for the hearty, slightly spicy miso radishes, which are given a special umami flavour by the miso paste and roasting in the oven, while at the same time losing some of their spiciness. The vegan salsiccia provides an extra portion of plant-based protein. The Mediterranean flavour of the salsiccia goes perfectly with polenta. Fried tofu or other vegan sausage is of course also suitable as a topping if you can’t find or don’t like vegan salsiccia.
The dish is ready on the table in just 20 minutes. It is therefore suitable as a quick, healthy dinner for regular days, but also looks great to impress your guests.
Polenta with Roasted Miso Radishes & Vegan Salsiccia
Ingredients
Creamy Polenta
- 125 g instant polenta
- 300 ml plant milk
- 300 ml light vegetable stock, or water
- 2 cloves garlic
- 2 tbsp vegan butter
- 1 tbsp yeast flakes**
Miso Radishes
- 250 g radishes
- 1 tbsp olive oil
- 1 tbsp miso paste**
Other
- 150 g vegan sausage, e.g. salsiccia
- 2 tbsp vegan green pesto, e.g. made from radish greens
- salt + pepper
Preparation
- Preheat the oven to 180 degrees Celsius. Wash the radishes, remove the ends and halve or quarter depending on their size. Mix the miso paste with the olive oil. Toss the radishes in the miso oil and season with salt and pepper. Place on a baking tray lined with baking paper and bake in the oven for approx. 15 minutes.
- Finely chop the garlic. Sauté in a pan with the butter over a medium heat. Deglaze with vegetable milk and vegetable stock (or water). Bring everything to the boil once and stir in the polenta. Cook according to the packet instructions (usually bring to the boil and then leave to swell over a low heat for approx. 10 minutes, stirring regularly). Finally, stir in the yeast flakes and a little more water if necessary and season with salt and pepper to taste.
- Cut the vegan sausage into bite-sized pieces and fry in a pan with a dash of olive oil. Arrange the sausage and radishes on top of the polenta. Drizzle everything with pesto and serve.
