Whether it’s apple pie, pear pie, plum pie, cherry pie or berry pie: this simple basic recipe for vegan fruit pie is sure to succeed, uncomplicated, quick, delicious and suitable for any time of year. Even slightly unattractive-looking fallen fruit or various fruit leftovers can be perfectly processed with this recipe. So enjoyment meets sustainability.
Vegan Fruit Cake - Simple Basic Recipe
Servings: 8 pieces
Ingredients
- 500 g fruit, e.g. apple, pear, plum, ...
- 300 g flour, e.g. wholemeal spelt flour
- 1 sachet baking powder, equivalent to 15 g
- 100 g sugar
- 1 lemon, zest only
- 1 pinch cinnamon powder
- 1 pinch salt
- 250 ml water, preferably sparkling water
- 100 ml neutral vegetable oil
- 2 tbsp apple cider vinegar
Preparation
- Preheat the oven to 180 degrees Celsius top and bottom heat. Grease a round springform tin (we use one with a diameter of 26 cm) with a little oil.
- First mix the dry ingredients (flour, baking powder, sugar and spices) in a bowl with a whisk. Then add the water, oil and vinegar and whisk everything into a smooth cake batter. Pour the batter into the springform tin.
- Cut the fruit to size and spread over the batter. In the example photos, for example, 4 apples have been cut into quarters, with the skin and skin removed, and lightly cut with a fruit knife at intervals of 2-3 mm without the apple pieces falling apart.
- Bake the cake in a preheated oven for 50 - 60 minutes.
