Kolache? Wondering what that is? A kolache is a kind of round mini cake. The pastry is of Old Slavic origin and can be found in slightly different variations in several countries. We have mainly orientated ourselves on the Czech version, which Andi came across for the first time in a vegan café in Neukölln and immediately fell in love with. The Czech sweet yeast disc is filled with a poppy seed filling, fresh plum and a few crumbles.
A sweet yeast dough is prepared for the kolache, which is divided into small balls after rising. These are then allowed to rise again briefly again and are flattened with the help of a glass. This creates a flat disc with a hollow in the middle that can be filled.
The filling is made by mixing together (ground) poppy seeds, plant milk and icing sugar. A slice of plum (or damson) and a few vegan crumbles, which are kneaded together from just 3 ingredients in a few seconds, are then added to each kolache. That’s it. At least almost. After 25 minutes in the oven, the small slices of dough turn into a delicious pastry that is hard to keep your hands off.
Vegan Kolache with Poppy Seed & Plum
Ingredients
Dough
- 360 g flour
- 175 ml plant milk
- 2 tsp dry yeast
- 60 g sugar
- 6 tbsp rapeseed oil
- 1 pinch salt
Filling
- 200 g poppy seeds, preferably ground
- 200 ml milk
- 80 g icing sugar
- 1/2 tsp cinnamon powder
- 3 plums
Crumble
- 4 tbsp flour
- 2 tbsp sugar
- 2 tbsp vegan butter, cold
Preparation
- For the dough, heat the milk to lukewarm. Add the dry yeast and sugar. Leave to stand for 10 minutes to activate. If the mixture bubbles slightly, the yeast is good. Mix with the remaining ingredients and knead for a few minutes to form a smooth dough. Cover and leave to rise in a warm place for at least 45 minutes until the dough has doubled in size.
- For the filling, place all the ingredients except the plums in a pan and bring to the boil briefly. Then leave to soak and cool.
- Divide the dough into 12 balls of about 50 g each. Place on a baking tray lined with baking paper, cover and leave to rise again for 20 - 30 minutes.
- To make the crumble, cut the cold butter into small pieces and knead with the other ingredients briefly between your fingers to form coarse crumbles.
- Preheat the oven to 180 degrees Celsius top and bottom heat. Flatten the balls with the bottom of a glass (approx. 7 cm in diameter) and brush with plant milk or plant cream. Fill the hollow with poppy seeds, add a slice of plum and sprinkle with the crumble. Bake in the oven for approx. 25 minutes.
