Fancy gearing up your vegan brotzeit game? Then this recipe might be of interest to you. Because today we’re making a vegan liverwurst (liver sausage) style spread from green spelt. A great soya-free alternative to our liver sausage made from beans and smoked tofu. The vegan green spelt liver sausage doesn’t need any miracle ingredients or magic hacks. Green spelt, vegetable stock, marjoram, onion and garlic provide a completely natural, full-bodied flavour. Our favourite way to enjoy the green spelt spread is on bread or rolls with spicy mustard and gherkins. What is your favourite combination?
Vegan Green Spelt Liverwurst - Green Spelt Spread
Ingredients
- 100 g green spelt
- 250 ml vegetable stock
- 1/2 onion
- 1 clove garlic, small
- 2 tbsp olive oil
- 1/2 tbsp marjoram, dried
- 25 g vegan butter
- Salt + pepper
Preparation
- Simmer the green spelt in a pot with the vegetable stock for approx. 30 minutes until soft. If the green spelt is finely ground, the cooking time is reduced to around 10 minutes.
- Finely chop the onion and garlic and fry in olive oil in a pan until translucent. Add the green spelt, spices and vegan butter and blend everything with a hand blender, either finely or slightly chunky, depending on your own taste.
- It is best to store the green spelt spread in clean screw-top jars in the fridge. Jars that are not completely filled up can also be frozen wonderfully.
