Spinat-Basilikum-Pesto Spaghetti

Du hast es satt, immer und immer wieder das gleiche Pesto zu essen? Du kennst nur die Grundpestos mit Basilikum oder getrockneten Tomaten? Probier dieses einfache Spinat-Basilikum-Pesto! Denn ernsthaft, du kannst nicht zu viele Pastarezepte kennen und Pesto ist immer eine gute Wahl.

Spinat-Basilikum-Pesto Spaghetti

Zutaten für 4 Portionen (jeweils etwa 1,00 Euro):

  • 500 g Spaghetti oder Pasta nach Wahl
  • 200 g frischer Spinat
  • 1 Bund Basilikum
  • 50 g Sonnenblumenkerne
  • 2 Knoblauchzehen
  • 5 – 10 EL Olivenöl
  • 1 EL Salz
  • 3 EL Hefeflocken

Zubereitung
1. Püriere die Hälfte des Spinats mit Basilikum, Sonnenblumenkernen, Knoblauch und 5 EL Olivenöl in einer Küchenmaschine oder mit Hilfe eines (Stab)Mixers. Füge den restlichen Spinat und mehr Öl (falls benötigt) hinzu und mixen bis eine feine Paste entsteht. Mit Salz und Hefeflocken abschmecken.

2. Die Pasta nach Packungsanweisung in Salzwasser kochen. Mit Pesto und Cashew Parmesan servieren. Das restliche Spinat-Basilikum-Pesto kann in einem luftdichten Gefäß mit Olivenöl bedeckt im Kühlschrank mindestens 1 Woche aufbewahrt werden.
