Vegan Kolache with Poppy Seed & Plum

Zutaten

Dough

  • 360 g flour
  • 175 ml plant milk
  • 2 tsp dry yeast
  • 60 g sugar
  • 6 tbsp rapeseed oil
  • 1 pinch salt

Filling

  • 200 g poppy seeds, preferably ground
  • 200 ml milk
  • 80 g icing sugar
  • 1/2 tsp cinnamon powder
  • 3 plums

Crumble

  • 4 tbsp flour
  • 2 tbsp sugar
  • 2 tbsp vegan butter, cold

Zubereitung

  • For the dough, heat the milk to lukewarm. Add the dry yeast and sugar. Leave to stand for 10 minutes to activate. If the mixture bubbles slightly, the yeast is good. Mix with the remaining ingredients and knead for a few minutes to form a smooth dough. Cover and leave to rise in a warm place for at least 45 minutes until the dough has doubled in size.
  • For the filling, place all the ingredients except the plums in a pan and bring to the boil briefly. Then leave to soak and cool.
  • Divide the dough into 12 balls of about 50 g each. Place on a baking tray lined with baking paper, cover and leave to rise again for 20 - 30 minutes.
  • To make the crumble, cut the cold butter into small pieces and knead with the other ingredients briefly between your fingers to form coarse crumbles.
  • Preheat the oven to 180 degrees Celsius top and bottom heat. Flatten the balls with the bottom of a glass (approx. 7 cm in diameter) and brush with plant milk or plant cream. Fill the hollow with poppy seeds, add a slice of plum and sprinkle with the crumble. Bake in the oven for approx. 25 minutes.
