Asparagus with Vegan Hollandaise Sauce

Zutaten

Asparagus

  • 500 g white asparagus
  • 1 l water
  • 1 tbsp salt
  • 1 tbsp lemon juice
  • 1 tsp sugar

Vegan Hollandaise Sauce

  • 5 tbsp vegan butter
  • 2,5 tbsp flour
  • 125 ml vegetable broth
  • 125 ml soy cream
  • 2 tbsp dry white wine
  • 1 tsp mustard
  • 1 tbsp lemon juice
  • 1 pinch turmeric, optionally for the colour
  • salt + pepper

Zubereitung

  • Peel the white asparagus and remove the tough and woody ends.
  • Bring the water to a boil in a large pan or a wide saucepan. Season it with salt, sugar and lemon juice. Add the asparagus, bring it to a boil and then let it simmer over low heat for about 12-15 minutes. If you like your asparagus extra soft, you should extend the cooking time accordingly.
  • For the hollandaise sauce melt vegan butter in a pot on low to medium heat. Stir in the flour. Add vegetable stock gradually while stirring.
  • Add the remaining ingredients slowly while stirring and bring to a boil carefully. Serve directly with the asparagus.
